I think allowing the option to talk about it at another time is a good idea, but forcing a schedule on someone seems kind of controlling. And this guy sounds real nice, so I think it's likely that he may feel this way as well.
People I know tend to use "together" to mean something between fuckbuddies and casual dating and not for serious relationships. I guess it comes down to a matter of cost vs value. Plus, at least among people I know, word gets around. If I was in a relationship that had been "official" for a month, I wouldn't expect a person to be as emotionally supportive as if we had been dating for six months.
